fix(evo-deploy): prefer systemd over compose in auto restart mode ...

When EVO_RESTART_MODE=auto, probe evoo-local.service (or EVO_SYSTEMD_AUTO_UNIT)
via systemctl user then system scope before falling back to compose. Document
Evo pinning of systemd vars and add a testkit case for the detection order.
